Coconut Sugar is a natural, high energy food source made by collecting sweet sap from the flowering stem at the top of the coconut tree called an inflorescence. The inflorescence is carefully clipped and then bent into a bamboo container for collection. Twice a day, these trees are climbed and bamboo containers switched out. It is usually the men and sons who do this, and to watch them climb the trees is amazing! The collected sap is transported into a tiled, clean kitchen where it is brought to a light simmer to concentrate the sugars. Once crystals begin to form, the solution is removed from the heat and crystallization of the entire basin occurs rapidly.

The women working in the kitchen grind the crystals while they are still moist, to break them into very small, fine grains. These grains are packaged into 10 kg bags and transported to the Quality Control Center. The over 700 families who make this Coconut Sap sugar, all bring their products here where it is further dried and tested for moisture content, particle size and microbes. It is from this site, that ocean going containers arrive and are filled with product bound for America.

Our Coconut Sap Sugar is light brown color and an all-natural sweetener that tastes a bit like brown sugar but has all the natural goodness of coconut water. love the coconut sugar

I have been using this for the partial sweetener in my water kefir. My kefir grain love it!! They had stopping growing but with this sugar they are going nuts and multiplying like crazy! The kefir is so active while its brewing. I am sold on this and will buy this again. Thank you for having this.

I've found the ideal sweetener I've been searching for

I've been looking for a natural, substitute to white sugar for a few years. Learned the awful truths about artificial sweeteners, found out that my body doesn't do well using honey or unrefined cane sugars, sugar alcohols, or agave syrup...so I had given up...and then I came across coconut sap sugar, and I have found what I need. It isn't as sweet as white sugar but that's good because I'm appreciating less sweetness in my foods. The calories for 1 tablespoon of coconut sap sugar is the same as 1 teaspoon of white sugar, and it has a little bit of a flavor that makes it taste good not just sweet. Works great as a brown sugar substitute, too, as it has that richer flavor. It's subtle flavor and sweetening is exactly what I was looking for, helping me appreciate the natural sweetness of foods, yet giving me that "sugar" taste I miss sometimes. Great in coffee, tea and cooking. I highly recommend giving it a try to see what you think!
