Every morning is an adventure at my house.

Getting children out of the house, on time, with all of their belongings, and with a good breakfast is hard work. And breakfast is the hardest part. My children drag their feet in the morning and, sometimes, have to walk out the door with cereal in one hand and milk in the other.

That’s not bad, but I know it’s hard to make it to lunch time on nothing but cereal and milk.

A couple of years ago, I began experimenting with different breakfast bar recipes that my children could grab and take with them. I started out with some ingredients that were less than healthy, then slowly transitioned them over to a healthier, more rounded recipe.

This recipe is one of their all-time-favorites. These bars are low in refined sugars and high in protein and fiber (from Wilderness Family Naturals Agave Inulin!).

They are especially good dunked in milk!

Make These Breakfast Bars Your Own!

You can substitute several things in for the items I have included.

For example, Wilderness Family Naturals Soaked and Dehydrated Pumpkin Seeds can be used in place of dried cranberries.

Wilderness Family Naturals Hemp Hearts can be used in place of flax seeds.

You can add your favorite nuts, too. Wilderness Family Naturals has a large selection of organic, raw, soaked, and dried, nuts. And you can use any variety of Wilderness Family Naturals nut butters in lieu of peanut butter.

A Little About Agave Inulin

No matter what you substitute, keep the agave inulin.

Why inulin? Agave inulin is one of those ingredients with multiple benefits. It’s high in fiber and adds sweetness to recipes without skyrocketing your blood sugar. It’s also prebiotic — meaning, it feeds the good bacteria in your intestines and helps promote healthy digestion.

I love that my children are getting the day off to a good start with plenty of protein and fiber. They think they’re getting a sweet treat for breakfast. Shhh… don’t give away my little secret.

Inulin and Honey Breakfast Bars are a quick and easy breakfast recipe for families on the go. Full of protein and fiber and low in sugar, these are especially good dunked in milk!

Ingredients

  1. In a large mixing bowl, combine nut butter, inulin, sunflower seeds, quick oats, flax seeds, and dried cranberries in a bowl. Mix thoroughly with a sturdy spoon or spatula.
  2. Place waxed paper in a 9x13 inch baking dish.
  3. Evenly spread out the mixture onto the waxed paper. Spreading a bit of coconut oil on your hands will help keep them from sticking to the mixture.
  4. Put the baking dish into the freezer, uncovered, for 1 hour.
  5. Pull the baking dish out of the freezer. Cut the frozen mixture into 16 even bars with pizza cutter.
  6. Cover the bars and store in the refrigerator for up to 5 days.
