Star Anise (Illicium Vernum) is an evergreen tree native to Vietnam and southern China. This herb contains anethol, the same chemical compound that gives the unrelated aniseed its very similar, and distinctive, flavor. Widely used in such cuisines as Chinese and Indian, it enhances the flavor of meats and is frequently used in liquor production. Ancient Chinese cultures used this herb to ease cold symptoms, and star anise is a source of the chemical compound Shikimic Acid, a vital ingredient in Tamiflu.
