There’s no sense in changing your food choices in the coming year if you don’t have some delicious and nutritious recipes to help you reach your goals. After all, healthy food does NOT have to taste like cardboard (We can thank the 1990s for that myth!).

Full of flavor and healthy fats from eggs and avocado, these simple avocado nori rolls are light, yet satisfying. They’re quick and easy to whip up, too! If you know how to boil an egg, you’ve got this.

Nori are sheets of compressed red algae which turn a dark green color when dried. “Seaweed” is a general nomenclature for everything from huge kelp plants to microscopic algae that are harvested from the ocean. You’re probably most familiar with nori as the seaweed commonly used to wrap sushi.

Because it comes from the ocean, it is rich in iodine — an essential mineral to support thyroid health. Nori is also high in other trace minerals, B vitamins, vitamin C, and iron. It contains an impressive amount of dietary fiber, yet it’s low in calories.

If one of your goals is adding more green foods to your diet, why not go beyond spinach and broccoli and try nori, too!

Full of flavor and healthy fats from eggs and avocado, these simple avocado nori rolls are light, yet satisfying. They're quick and easy to whip up, too!

Ingredients
  • 2 ripe avocados
  • 2 hard-boiled eggs
  • 1sprig green onion
  • salt and pepperto taste
  • 2sheets WFN Nori
Instructions
  1. Chop avocados, eggs and onions into small pieces.
  2. Season with salt and pepper to taste, mix until combined and creamy.
  3. Divide avocado-egg mixture into two.
  4. Spread each half onto a WFN nori sheet, then roll.
  5. Eat right away.
Recipe Notes

Hard-boiled eggs and nori have a very distinct smell, so make sure you like both of those ingredients before making these rolls. My kids (6 and under) are not fans, but I can't get enough of this stuff.

After the rolls sit for 10 minutes or more, the nori sheets start to soften and become a little chewy.
