I love to culture the coconut water.  We call this coconut kefir.  When drank with a meal it adds good probiotic flora to help me digest my meal.  When drank in the evening it helps a me to sleep soundly and peacefully.

How to culture coconut water to make coconut kefir: 

Take 1 Liter of coconut water (you may use the coconut water from these tetra paks or fresh water from young coconuts. (If you use the 250 ml tetra paks it will take 4 to make a liter of water.)  Add 1 packet of kefir starter and place lid on jar.  It will now take 4-5 days for the kefir to culture at room temperature.  The coconut water will become cloudy as the culture grows and it will become "fizzy".  When the culture is done, add a twist of lime and a little stevia or organic sweetener of your choice.  Then sit down and enjoy this delicious probiotic drink.  It is alkalinizing, wonderful, and very, very healthy.

If you have an ice cream maker you can make your own coconut sherbet.   All you need to do is to pour the coconut water into your ice cream maker, close the lid, cover it with ice and churn.  You will get a thick, ice cream-type of frozen coconut water that is both delicious and refreshing on a hot summers day.  Making SmoothiesYou can freeze the coconut water in your ice cube tray and use these ice cubes when you are making your smoothies.  Just pop this ice in  with your fresh fruit.  You will probably never use regular ice cubes again.
