Cacao is the bean that chocolate is made from. In its raw state, it contains many chemicals that enhance physical and mental well-being, including an incredibly rich supply of magnesium. The cacao powder is created by cold-pressing raw, organic cacao beans into a pressed cake separating the oil from the protein and fiber. The temperature is never allowed to exceed 120° F and is usually 104° F (all other cocoa powders are exposed to temperatures as high as 300° F!). A high-accuracy thermometer monitors the process. The remaining dry 'cake-like' material is then cold-ground and fine-milled so that only the finest, most bio-available raw cacao particles become the finished product. This allows for maximum digestion and antioxidant absorption.

When it comes to antioxidants, some are water-soluble and other antioxidants are fat-soluble. In the case of raw cacao, which is loaded with antioxidants, the vast majority of its antioxidants are water-soluble. By removing the fat in the cacao bean, you then have a product where the ORAC scores almost double. The result is a concentrating of the antioxidants! If the powder were heated during the pressing, you would loose three fourths of the antioxidants. Even bitter chocolate loses seven eighths of the antioxidants.

Directions
This delicious, natural, organic cacao powder is easy to use when blended with smoothies, coffee, tea, coconut milk, nut butters, coconut spread, desserts etc. It is nice sprinkled on fruit and makes the best hot or cold chocolate drinks.
